LAND AND CLIMATE
Siliceous soil of schistous origin, stonier on the slopes, more sandy in the depressions.
Climate: it is influenced by the sea. Hyères harbour is only a few kilometers away
THE VINEYARD
Most of it is sloping with vines on trellis.
average vine age: 20 years.
The blend is composed of 61% Rolle, 24% Sémillon and 15% Ugni Blanc.
THE WINE MAKING
Grape harvest is entirely by hand with on site grape sorting,
Stalk stripping and inerting of musts is immediate upon entrance of the grapes into the cellar,
Pressing is performed after a short maceration.
Temperature control is effective at all stages with fermentation at a fixed 17°C.
PRODUCT CHARACTERISTICS
Alcoholic strength: 12,5 % vol.
The wine is bottled in a 75 cl Bordeaux “Alliance” bottle with a natural cork closure.
Bottling is carried out at the estate. The bottle is presented with label, back label and capsule.
Packaging is in cases of 4 x 24 bottles.
TASTING AND FOOD MATCHING
Bright colour with green reflections. The nose reveals floral and aniseed aromas.
The palate is fresh and expressive, with white floral notes and good balance.
This wine pairs beautifully with foie gras, delicate fish dishes, and vegetables such as asparagus,
artichokes or fennel salads. It is also well suited to fruit-based desserts, such as a fruit crumble.
