LAND AND CLIMATE
Siliceous soil of schistous origin, stonier on the slopes, more sandy in the depressions.
Climate: it is influenced by the sea. Hyères harbour is only a few kilometers away

THE VINEYARD
Most of it is sloping with vines on trellis.
average vine age: 20 years.
Grape variety: 100% Rolle.

THE WINE MAKING
Grape harvest is entirely by hand with on site grape sorting,
Stalk stripping and inerting of musts is immediate upon entrance of the grapes into the cellar,
Pressing is performed after a short maceration.
Temperature control is effective at all stages with fermentation at a fixed 17°C.

Alcoholic strength: 12,5 % vol.
75 cl Alliance Bordeaux bottle; NEUTROCORK closure 44 x 24 mm, branded;
estate bottled; label; back label; tapered capsule.

TASTING AND FOOD MATCHING
Pale robe with green highlights. The expressive and complex nose evokes linden blossom and gingerbread,
along with notes of pineapple and mango. The palate combines roundness and freshness,
offering a beautiful and persistent finish.

A gastronomic wine, ideal with Provençal fish such as sea bass or sea bream, shellfish, crustaceans,
bouillabaisse, and white meats. It also pairs well with goat cheese.
Perfectly suited to citrus salads or fresh fruit tarts.
